Working with the local community to establish an organic garden coupled with a workshop series to increase food security and build food justice in the Whispering Meadows Neighborhood
Veronica completed graduate school at East Tennessee State University in 2014 with a Master of Arts in Liberal Studies with a concentration in Gender and Diversity Studies along with a Master of Public Administration with a concentration in Economic Development and Planning. Her research is in food security and food sovereignty--especially as it relates to gender in economically disadvantaged rural areas. She has traveled the world studying the intersections between gender and food security. Her experiences and research resulted in the creation of the Johnson City-based non-profit
Build It Up! East Tennessee in 2011
which seeks to promote local food production while empowering communities. Other areas of practice include program development and diversity education. Most recently Veronica has worked with the Appalachian RC&D Council and Jonesborough Locally Grown in East TN to build a more comprehensive and accessible local food system
culminating in the opening of the region's first local-food-only non-profit farm store
the Boone Street Market
in October of 2014.\n\nVeronica has been invited by local
regional
and national organizations to speak on issues such as gender and food insecurity
diversity training
and program development. She has also worked with the Women's International League for Peace and Freedom at the United Nations as an advocate for rural women.
