Currently, I am a Saskatchewan Ministry of Agriculture Research Chair (Professor ) in Protein Quality and Utilization within the Department of Food and Bioproduct Sciences at the University of Saskatchewan (Saskatoon, Canada) . My research area focuses on developing innovative knowledge and technologies aimed at enhancing the utilization proteins derived from Saskatchewan pulse, cereal and oilseed crops, and am funded through a variety of provincial, federal and industry sources. My research areas include: evaluating protein quality and functionality; developing encapsulated delivery systems for carrying plant phenolics, omega-3 fatty acid rich oils and probiotics; developing edible packages; dough rheology; and food security. I am currently Editor and Chief of Canadian Food Insights, and serve on the Editorial Board of Food Research International. I also chair the Board of Directors at the Agriculture Council of Saskatchewan, and serve on the Board of Directors of the Canadian Institute of Food Science and Technology.
