Professor O'Mahony is concerned with developing better methodologies for sensory and consumer testing, involving research into the working of the human sensory systems and how the brain processes information during testing. He is one of the pioneers in the implementation of Thurstonian modeling for discrimination, rating, and consumer preference testing as well as the introduction of many new methods and models.
He's also taught basic and advanced courses in sensory science as well as statistics both on the UCD campus and worldwide in academic and industrial settings.
