Served as a consultant on an NIFA-USDA HACCP-Based Inspection Model and Model Verification Testing Program at Gold Kist Poultry in Guntersville
AL. Duties included sampling of whole broiler carcasses for generic E. coli and Salmonella using the USDA/FSIS sampling methods. Liaison between RTI and Gold Kist QA/QC team to disseminate pertinent information concerning HACCP and sampling procedures used during the USDA study. Provided technical support to USDA inspectors in terms of procedures and organoleptic characteristics of processed whole broiler carcasses.
