Good
Professor Straughan's online class has weekly lectures of around one hour each. There's a weekly homework assignment and an exam every three weeks. The exams were fifty questions all multiple choice and final which is not cumulative. People who say the exams were tough just haven't watched the lectures because all the questions come from there. I suggest you watch the lectures, take a few notes, study them and the lessons are easy.
Average
Professor Straughan's class has a lot of information and long lectures. However, her lectures were either interesting or will be using your common sense. The coursework includes five exams mc plus directly from the lectures, 14 domain nutrition assignments one that due every week, a project in which you track your diet for three days and comment on it. The teacher assistant and she were accessible through email.
