Doctor Pieper's class in very interesting. She has a wealth of nutritional knowledge and made our weekly teaching materials easy to understand. There is a weekly peer-reviewed nutrition article that you need to read and take a quiz after. There are optional questions to answer as you read the paper, which I think helps make the quiz quick and easy.
